Dalrymple Estate Chardonnay 2010
The fruit for Dalrymple Estate Chardonnay 2010 was sourced from 25-year-old vines on C Block, within the Dalrymple Vineyard. C Block is situated on a fairly steep slope of the vineyard and this, combined with free draining loam soil, results in only a small amount of moisture being absorbed, therefore limiting potential growth yet sustaining small bunches of concentrated grapes.
Three harvest selections were made, all at low baumé, to capture the distinctive freshness of the fruit.
Hand harvested fruit was carefully sorted and whole bunch pressed; extracting only juice of exceptional quality with minimal phenolics to maintain great tightness and linearity. All fermentation was completed with natural, wild yeast, and natural malolactic fermentation spontaneously occurred in almost half of the wine. After 12 months of ageing on whole lees, with selected battonage, the wine was bottled and aged for a further six months in bottle, allowing it to achieve harmony and balance.
Dalrymple Single Domaine Block T36 Pinot Noir 2009
This wine is entirely from a single clone of Pinot Noir, the classic MV6, situated from Block T36 in the north Tamar Valley. T36 consistently produces wines of generous tannin and fruit expression and the 2009 vintage suited this block extremely well.
A number of classical Pinot Noir winemaking techniques are employed, including hand-sorting fruit, cold soaking, whole bunch inclusion, hand-plunging and wild fermentation.
A bright ruby red, the Dalrymple Single Domaine Block T36 Pinot Noir 2009 has a lovely depth of colour and lifted aromas of fresh dark fruits and a rich confit of plums, blackcurrant and blackberry. Attractive notes of fine herb support the rich fruit and a year of bottle age has helped to develop classical savoury Pinot Noir notes. Rich, firm and focussed, the palate is an example of muscular Pinot. Early sweet fruit opens up to spiced dark fruits and coffee notes on the mid palate, supported by fine grained long tannins that drive the finish with focus and length.
Dalrymple Pinot Noir 2010
Each block of Pinot Noir from both the Dalrymple and selected grower vineyards is hand-harvested separately and kept separate throughout the entire winemaking process. Some blocks are divided into smaller parcels, to maximise blending options. A number of classical Pinot Noir winemaking techniques are employed: hand sorting fruit, cold soaking, whole bunch inclusion, hand-plunging and wild fermentation; all selected to create wines that combine fruit intensity with layers of texture and persistent varietal characters.
A vibrant dark rose petal in colour, the Dalrymple Pinot Noir 2010 has perfumed aromas that are fresh with rose petals and lavender. The fruit expression is typically Tasmanian, with fresh strawberry and raspberry complemented by pomegranate and rosewater. The fruit is supported by delicate spice and dried savoury herbs and the oak expression is balanced and sweet. The palate is vibrant, with fleshy red cherry characters that give warmth and mouth filling texture. Seductive and creamy, this wine is balanced with supple tannins and a fresh natural acidity.

Each block of Pinot Noir from the Dalrymple vineyard is hand-harvested separately and also kept separate throughout the entire winemaking process. Some blocks are then divided into smaller parcels to maximise blending options. A number of classical Pinot Noir winemaking techniques are employed: hand-sorting fruit, cold soaking, whole bunch inclusion, hand plunging and wild fermentation. For vintage 2009 a single block,
Dalrymple Cottage Block 1 (DRC1), shone above the rest. This block, with 20 years vine age, has reached a wonderful natural balance – low crops, early ripening and terrific fruit expression showing distinctive full ripe tannins and mulberry fruit. Twelve months of ageing in glass means the wine is released as it approaches the peak of its development.
Medium pomegranate and garnet in colour, the Dalrymple Estate Pinot Noir 2009 has a complex, lifted nose, fruit of mulberry, brambles and confit raspberry. Typical Dalrymple spice is complemented by cinnamon and attar of rose and nutty spiced oak supports the distinctive Dalrymple fruit. The even, mineral-textured palate is focussed and silky. Fine fruits, including raspberry, blood plums and darker fruits, abound across the mid palate, giving great length. Natural fresh acidity gives vibrancy to the palate and a perfectly balanced mouth watering finish.
Dalrymple Sauvignon Blanc 2011
The Tamar Valley in Northern Tasmania is renowned for exceptional cool climate wines. Multiple sites and soils provide complexity to the final wine, while long cool ripening periods with cold nights provide the perfect conditions for intense aromatics and fine natural acidity.
Low cropping levels and good fruit exposure lead to a great intensity in fruit flavours, requiring only the most basic of winemaking intervention to ensure the production of wines of intense flavour with great acidity, length and balance. Texture was built into the wine through a short period of lees stirring post fermentation in the tanks.

A variety of winemaking techniques are used to create Dalrymple Sauvignon Blanc, including wild ferments, lees stirring and the use of older French oak, which all contribute to a final wine of unexpected complexity and texture.
