Tasting Note
Pale straw with bright gold hues. Lifted aromas of early-season white peach, grapefruit, Meyer lemon and delicate white florals are layered with subtle notes of toasted brioche and sea spray. A lively and finely structured Chardonnay with chalky, textural acidity and a long, clean finish. Flavours of nectarine, citrus and almond are complemented by gentle oak influence and lees-derived complexity, building texture, balance and nuance across the palate. Ten months maturation in French oak, with a small portion in ceramic egg, has added depth while preserving the wine’s cool-climate freshness and precision.

Grilled ocean trout with butter almond sauce served with simple citrus pilaf and broccolini.
Treatment
Dalrymple Chardonnay was handpicked from carefully selected Tasmanian vineyard parcels, then gently whole-bunch pressed and settled overnight. Fermentation took place primarily in French oak puncheons, with a small portion in ceramic egg to build texture and complexity. The wine matured for ten months, with lees stirring over the first four months and malolactic fermentation completed in spring, resulting in a Chardonnay of freshness, texture and layered complexity.
