An Incredible Day: Dalrymple Unearthed 2026

A Tasmanian Food and Wine Experience at Pipers River 

As summer reached its height on Saturday 14 February 2026, we welcomed guests to our home in Pipers River for another Dalrymple Unearthed. The day was grounded in place, season and the quiet rhythm of our vineyards, offering an immersive Tasmanian food and wine experience shaped by landscape, vineyard and table. 

From the moment guests gathered in Launceston and travelled north together, there was a shared sense of anticipation. Unearthed is designed to slow things down. It is an opportunity to walk the rows, taste the wines where they are grown, and spend time in the company of those who are equally drawn to cool climate Pinot Noir and Chardonnay.

Oysters and Coal River Chardonnay 

On arrival at our Pipers River winery, the day began simply with freshly shucked Tasmanian oysters served natural with lemon, paired with a glass of Coal River Valley Chardonnay. Bright and mineral, the Chardonnay carried a saline edge that echoed the nearby coastline. The oysters, pristine and briny, set the tone for the afternoon, allowing Tasmania to speak clearly through both wine and food. 

Guests then stepped into the vineyard with our team, tasting 2022 Single Site Pipers River Chardonnay and 2023 Single Site Pipers River Pinot Noir, among the vines that produced them. Standing between the rows with glass in hand, Peter Caldwell our Vigneron, explains the nuances of site and stories of vintages passed. Whilst a bright and sunny day, here the cool air from Bass Strait moves across the hillsides, providing us with gentle ripening conditions and a long growing season. All contributing to the tension and line that define our Single Site Pipers River Chardonnay and Pinot Noir. 

Returning to the winery for canapes on the lawn, guests samples canapés included kingfish sashimi on a toasted nori rice cracker with avocado and wasabi and pumpkin arancini with caramelised orange and pumpkin seed yoghurt. A perfect way to enjoy the remaining Single Site Pipers River wines whilst taking in the vineyard.  

A Barrel Room Masterclass  

Our guests were now directed the Dalrymple barrel room, for Peter Caldwell to take host a masterclass of selected wines. Surrounded by oak barrels of our more recent vintages, the conversation turned to an in depth look site expressions, vintage conditions and the subtle distinctions that shape each vineyard across Tasmania.  

The selection featured our 2025 Pinot Meunier, 2023 Single Site Coal River Valley Pinot Noir, 2023 Single Site Ouse Pinot Noir, 2022 Single Site Swansea Pinot Noir and 2023 Mt. Lord Pinot Noir. Tasted side by side and guided by Peter Caldwell, revealing their individual personalities. A truly unique experience and in-depth dive into our single site wines, which tell the story of the Tasmania’s sub-regions. It is one thing to describe single site Pinot Noir, but another to experience the contrast of vineyards in a single sitting, thoughtfully and without rush, understanding how place defines flavour. 

A Long Lunch by Hubert and Dan 

After a morning of tasting and talking, it was now time for a long lunch catered by Hubert and Dan. Out on our winery lawns and basking in the Tasmanian sun, our guests enjoyed a menu which reflected the same philosophy as our wines; seasonal, expressive and grounded in Tasmanian produce. 

Hubert & Dan provided fresh market fish served with charred sesame cabbage, koji butter sauce, preserved lemon and tomato jam. A complex and flavourful dish which paired beautifully with our 2022 Single Site Pipers River Chardonnay. Following this slow braised lamb shoulder, with jus and chimichurri, which was complemented by the structure and acidity of our 2025 Tasmanian Pinot Noir. Served with sides of charred greens with smashed peas and purple cabbage sprouts, and crisp fried chat potatoes with garlic parsley butter. The quality of the food impressed everyone at the table, each dish founding harmony with the wines poured across the afternoon.  

Finishing with dessert, shared plates of fruit and local Tasmanian cheeses were complimented with refilled glasses, relaxed conversation and stunning vineyard views of Pipers River. An acoustic duo played softly in the background, their live music drifting across the vineyard and weaving through conversation. It added a gentle rhythm to the afternoon, unhurried and warm, as glasses were refilled and the golden light settled over the vines. 

Our team is incredibly grateful for the chance to showcase our home and vineyards to all who attended. Giving those the opportunity to experience Tasmania’s diverse sub-regions through single site Pinot Noir and Chardonnay, talk part in guided vineyard and winery tours with Peter Caldwell and then sit at a long table that celebrates the best of Tasmanian food and wine. We can think of now better setting for guests to learn about Tasmanian wine.  

As vintage approaches once again, we are reminded that each season brings its own character. Unearthed offers a moment to pause before harvest begins, allowing us to gather in the vineyard at its most generous, and to share the stories, places and wines that define Dalrymple Vineyards.
