The Details

Tasting Note Complex aromas of spiced plums, ripe tamarillo and cranberries combine with hints of alluring savoury notes. The palate entry is seductive with fresh plums persisting to balance suave tannins, coupled with the complexity of dark spice and blue florals on the way to a long and subtle finish.
Best Enjoyed With Butterflied poussin or pumpkin wedges roasted with an Asian five spice rub, served with cranberry sauce over a celeriac mash and asian greens.
Treatment The fruit was handpicked, 20% of the bunches were placed directly into the fermenter with the balance being destemmed and placed on top for fermentation. Fermentation commenced with a combination of hand plunging and pumping over of the must. After fermentation the wine was settled before placing into French oak barriques (30% new) for 10 months. Malolactic fermentation occurred in spring and the wine was blended in January prior to bottling.

Deep red tinged with purple; lovely smoked meats, fivespice and charcuterie layered over dark cherry fruit on the nose, the palate elegantly medium weighted and soft textured with refinement and balance. Tannins are ample and supple. Drinking beautifully right now, but will also cellar well.
