Tasting NoteDalrymple Vineyards Single Site Mt Lord Pinot Noir 2024
Aromatics of dark cherry, violet, blackberry, cola, roasted Asian spices and subtle vanillin notes. With time in the glass a softness and savouriness develops adding great complexity. The palate is well defined with dark fruit giving a plush, velvety texture with fine tannins and natural acidity providing a lift to the vibrant and lingering finish.

The warmer vintage is noticeable with a shift towards riper cherry, cranberry and hints of plum, while still retaining the hallmark Asian spice to add complexity, along with vanillin softness. There is a density to the aromas that takes time to fully unwind in its youth, it is worth opening 1-2 hours earlier to allow these to develop. A soft entry to the palate with ripe cherry flesh texture, balanced with fine natural acidity and silky tannins gives focus before the long fruit flavour finish. Once open, savoury notes will develop to further enhance the complexity.
Dalrymple Vineyards Single Site Coal River Valley Pinot Noir 2024
Complex aromas of spiced plums, ripe tamarillo and cranberries combine with hints of alluring savoury notes. The palate entry is seductive with fresh plums persisting to balance suave tannins, coupled with the complexity of dark spice and blue florals on the way to a long and subtle finish.

Nigella crusted roast beef fillet, with masala kipfler potatoes roasted with split peas and baby beetroots; or mushroom and tofu Hokkien mee.
Dalrymple Vineyards Single Site Pipers River Pinot Noir 2024
Roasted pork loin with red cherry reduction served with celeriac puree and Asian greens; or spiced jackfruit, rice and bean filled baked peppers with roasted vegetables.
Dalrymple Vineyards Single Site Coal River Valley Pinot Noir 2024
Butterflied poussin or pumpkin wedges roasted with an Asian five spice rub, served with cranberry sauce over a celeriac mash and asian greens.
TreatmentDalrymple Vineyards Single Site Mt Lord Pinot Noir 2024
The fruit was handpicked, a small amount of the bunches were placed directly into the fermenters with the balance being destemmed and placed on top for fermentation. Fermentation took place over 5 days with a couple of plunges, was then pressed and placed into a blend of French oak barriques (30% new) for 10 months. Malolactic fermentation occurred in spring. Selected barrels were blended, bottled and cellared prior to release.

The fruit was hand-picked and placed into fermenters with 10% whole bunches included in the ferment, the balance being destemmed.Fermentation was complete after 5 days, with two to three gentle hand plunges during active fermentation to gently extract tannins. The wine was drained, pressed and settled prior to being placed in French oak barriques (30% new). The wine underwent malolactic fermentation during its 10 months in barrel.

The fruit was handpicked, 20% of the bunches were placed directly into the fermenter with the balance being destemmed and placed on top for fermentation. Fermentation commenced with a combination of hand plunging and pumping over of the must. After fermentation the wine was settled before placing into French oak barriques (30% new) for 10 months. Malolactic fermentation occurred in spring and the wine was blended in January prior to bottling.
