The parcel from the barrel ferment provides a nutty complexity. The palate is fresh with bright fruit characters. The texture of peach flesh and mealiness helps provide depth and interest. Delicious with Asian inspired dishes; think ginger, spice and Asian greens.

Cave Block Chardonnay 2015

Delicate aromas of lemon curd and preserved citrus are immediately apparent with hints of roasted cashews and ground ryegrass seed adding some softer depth and complexity. A fine acid palate, that is the hallmark of the Cave Block, provides drive through the palate with mealy texture providing depth and balance to vibrant citrus fruit characters. The finish is clean and long with lingering notes of nectarine skins and roasted kernels.

The palate delivers on the aromatic promises, subtle entry and lively mid-palate but textured with a silkiness of tannins that comes from seasons like 2014. The concentration of fruit with a fine acidity gives persistence to length and finish. I open this wine three to six hours before drinking while it is young, but with discretion and age, this breathing time can be shortened.
